Tra i frutti più prelibati della natura, l’uva

veniva coltivata nella zona di Mùtina

(Modena) fin da quando questa era colonia romana. Virgilio, nelle Georgiche, già parlava dell’abitudine di cuocere il mosto dell’uva per ottenere una bevanda dolce e corroborante. Nel corso dei secoli,

attorno a quel liquido lucente ottenuto dal mosto dell’uva si è sviluppata una costante elaborazione, fino alla consapevolezza, ai tempi del Ducato Estense di Modena (16° sec.) che se ne poteva ricavare un prodotto straordinario, un “balsamo” cui furono subito attribuite virtù benefiche e curative.

Intorno al 1850, dopo secoli di elaborazioni e sperimentazioni, fu infine codificata la procedura di ottenimento dell’Aceto Balsamico di Modena, che rimane la stessa anche ai giorni nostri.

Amongst all nature’s most exquisite fruits,

grapes were cultivated in the area of Mùtina (Modena) ever since it was a roman colony. In the Georgics, Virgil was already talking about it being customary to cook the must of the grapes in order to obtain a sweet and fortifying drink. Throughout the centuries, around that shiny liquid obtained from grape must, a steady elaboration has been developed, right up to the awareness, during the times of the Estense Duchy of Modena (16th century) that an extraordinary product could be extracted from it: a “balm” to which beneficial and curative properties were immediately attributed. Around 1850, after centuries of elaborations and experiments, the procedure for obtaining Modena Balsamic Vinegar was finally codified; and this remains the same right up to our present day.

Zu den köstlichsten Früchten der Natur gehört die Traube, die in der Gegend von Mùtina (Modena) seit der Zeit, in der dieses Gebiet eine römische Kolonie war, angebaut wird. Bereits Vergil sprach in den Georgica von der Gepflogenheit, den Traubenmost zu kochen, um ein süßes und stärkendes Getränk zu erhalten. Im Verlauf der Jahrhunderte hat sich um diese glänzende Flüssigkeit eine konstante Bearbeitung entwickelt; bis man zur Zeit des Herzogs von Este von Modena (16.Jh.) zu der Erkenntnis kam, dass man daraus ein außergewöhnliches Produkt gewinnen konnte: ein „Balsam“, dem sofort wohltuende und heilende Tugenden

zugeschrieben wurden. Um das Jahr 1850, nach Jahrhunderten von Bearbeitungen und Versuchen, wurde schließlich das Verfahren zum Erhalt des Balsamico-Essigs aus Modena festgesetzt, das bis zur heutigen Zeit das gleiche geblieben ist.
